Healthy Carrot Cake Cheesecake Bowl
Well, we made it…today marks the Spring Equinox so we are officially done with Winter!
(I’m sorry, I couldn’t help myself – this picture just cracks me up! Although, in my world, there’s only one season when it comes to yoga pants and it lasts all year long…oops!)
We’ve had some decent weather the last few days so Henry and I have spent some time enjoying the fresh air. We even went to our neighborhood playground a couple times to play on the swings! Henry’s still a little small for the baby seat, but he likes to sit in my lap and hold onto the chains as we swing in the “big kid” swing.
If you remember in Henry’s 9-month update, I mentioned his love of our new game “Sweet Baby”. Basically, he will lay his head on a person or something soft and wait for you to say, “Aww, sweet baby”, before popping back up. He will do this over and over again, most times saying the “aww” part with you. It is adorable but it has also become my sneaky way of getting him to stay in one place for at least a short period of time. I was able to capture a portion of it the other day while playing in our room: Sweet Baby.
I also wanted to share with you the most amazing concoction I’ve come up with in a while. I’m telling you – it is DE-licious! The best part is that it’s pretty healthy and will satisfy that nagging sweet tooth! I mentioned in a recent post that I tried out this carrot banana muffin recipe from Elana’s Pantry. These muffins are gluten-free, naturally sweetened (dates and bananas) and are comprised of ingredients that are all staples in our kitchen, making it an easy go-to recipe. Ryan is a huge fan of these, as well, so I’ve made several batches over the last couple weeks. (Note: I add 1.5 tsp vanilla extract, 1 sc vanilla protein powder, and 1/2 tsp pumpkin pie spice to the original recipe and only bake them for 23min.)
The other day I was looking for a quick post-workout meal and our pantry was a bit bare. So I went with something simple and mixed ~1/2c Greek yogurt with 1/2 sc vanilla protein powder and crumbled a carrot banana muffin on top.
Oh my goodness! The combination literally tasted like cheesecake. It was that good. Plus it provided a decent punch of protein, to boot! This will definitely become a regular meal option for me in the future and I strongly suggest you try it, too!
